Pear and Goat Cheese Pizza

School has been quite hectic lately (hence the lack of posts).  Anyway, I used pizza dough from Trader Joe's and topped it with tomato sauce, sliced pears, goat cheese, mozzarella, oregano, and parsley.

Goat Cheese

So if you know me, you would know that I love love love goat cheese. For Christmas I received a nice little goat cheese making kit that I was very eager to try. I had to hunt down some goat's milk but once I did, I immediately wanted to try making my own goat cheese!

The process was fairly simple: heat the milk to 190 degrees, add some citric acid, strain milk in a cheesecloth, put in molds, and wait. It took about 24 hours for the cheese to harden to the consistency I wanted and to develop the tangy, sweet favor.

All in all, it was a fun experiment and I definitely recommend it! It tasted great (although I may be biased..)

Pumpkin Spice Cake

One of my roommates celebrated her 22nd birthday this past week so of course I had to bake a cake!  Her sister, who also lives with us, secretly informed me that she had wanted to try a spice cake.  I found this recipe online and made a two layer cake.*  Nothing goes better with a spice cake than cream cheese frosting, some drizzled caramel, and crushed Almond Roca.  Oh, and a cup of hot chocolate of course.

Pear Bread

For some reason, I bought a huge bag of pears last week.  They weren't on sale and I didn't have a recipe in mind that called for pears.  I don't know what led me to believe that I could finish fifteen pears by myself before they all would spoil.  Anyway, I quickly began to search the Internet for pear recipes and I landed on this one.  I halved the recipe because I didn't have a bundt pan.  Big mistake.  This stuff is delicious.  In fact, it may be my favorite fruit bread recipe ever.
